Hi I'm looking for opinions on what would be better to run my
Nord Stag 3 through. A pair of EV ZXL-BT or QSC CP8? Thanks for any help.

I will be playing in a band with me, guitar, bass, drums, and vocalist.
We won't have everything going thru PA's, or have monitors.
It's going to be very old school and probaly not playing to more than 100-150 people.
This is going to be my amplification that the audience will hear. Trying to
take peoples comments that this would be better than say a Roland keyboard amp.

I have 2 CP12s as monitors. Have only used them at home so far but they can get loud. The CP8 has the same amp and even wider dispersion (90 degrees) so it should perform even better as a small stage amp.

OK, so it''s just for you -- no one else -- and won't be part of a larger PA system some day. Also, you're looking at a budget point it appears.
Both of your choices are OK for entry level keyboard amplification, better than many "keyboard amps". The EV will do bass lines better (if that's a concern), I would expect the CP8 to sound a bit cleaner and disperse better. It also has a useful DSP. So, if I had to choose between the two, it'd be the CP8 or its bigger brother the K8.2.
Other things to keep in mind:
- stereo is really nice if you can swing it (2 speakers on stands)
- a small mixer will help set gain levels and feed the FOH PA if needed
- buying used is great when it comes to PA gear
- don't forget the DJ supply shops for great prices, etc.
