I own a Stage 2EX and don't know if this was changed in the Stage 3. The Stage doesn't "steal" from the 1' drawbar when percussion is on. Essentially, the 1' drawbar is always available whether percussion is on or off. On the Electro this was a configurable parameter, and I assume it is on the C2D as well.
On the Electro I had used that feature a lot, as it mimics the style of some jazz organists. You would set the 1' drawbar to 4 and turn percussion on. While you played a solo with the percussion, the 1' was silent. When you went to comp, you would simply turn off percussion and the 1' would kick in to give a bit of shimmer to the sound. Now, on the Stage, I have to turn off percussion and pull out the 1' draw button. Not happy about that.
I'll let others chime in a debate about the whole 122 close setting. I have no dog in that race.

The mechanical drawbars can be on or off.

NS3 has for Pipe organ two mode:
"The PIPE1 organ model is not designed to imitate any existing instrument,
but rather as a useful and appealing “all-purpose” organ."
"The PIPE2 organ model faithfully recreates a principal pipe section - the
sets of metal pipes, or ranks, that commonly make up the backbone of
a pipe or church organ."
"The drawbars on the Nord Stage 3 88 and 76 key versions are represented by buttons and LED chain graphs. The 73 key Compact version uses “real” mechanical drawbars."
The drawbars are working like B3 drawbars.

The pipe sounds on the the Nord stage 3 are “interesting”. Definitely not designed to stand alone as suitable emulations or actual pipe organ stops but great for blending into patches to get that authentic organ sound. I have the c2 and was hoping the stage could help add to the pipe organ collection of sounds but no, they are two very different animals. B3 is identical and Fabulous on both.
