I bought the Stage 3 compact, because as an organist, I need the waterfall keys.

Are you mainly a pianist, organist or synth player? That should give you the answer.
If you don't need a full piano action, the Compact should be more than enough: the sounds and features are exactly the same, and it will save you a few $$$ and many kilos.

I had a 76 for my original NS2 because I really wanted the Piano feel. What I play is pretty evenly split between piano, organ and synth. The fully weighted keys were not super for that. I ended up with a compact and have been extremely happy with it. If you mainly play piano, the 76 or 88 have a better feel.

Deciding myself between 76 or 88 Stage 3. I have only owned a 61 and 88 keyboard, and am afraid that I'll miss the extra keys that the 88 provides. Kind of expensive piece of equipment to have buyers remorse, so I can understand your hesitation. Piano players, imo, should not go with 61 key. Organ players, absolutely! Good luck with your decision!

I always had the Stage88 version.
Although I'm not a pianist and more a synth guy I must say that the NS3-88 feels the easiest to play (compared to NS1/NS2).
Even "organ-smears" leaves my skin intact because my perception is that the keys are "smoother" and less edgy.
But this may be just me...
Apart from the keybed I also prefer to have maximum space for splits, even more with the NS3 since it has 3 splitpoints.
I've never played om a compact so can't comment on that.
In the end I'd advice to do a side-by-side comparison in a shop and then you can decide if it matters (enough) for you wrt. keybed.
The need for splits (and needed width) is something only you can answer for yourself.
