They will sound like they're in mono. Meaning that, apart from any stereo effects you might use, if you're playing through two speakers, the same sound will be coming out of both.

Mono samples use half the memory of stereo samples. In most cases, the original sounds are mono, so there would be no advantage to sampling in stereo, all it would do is double the memory needed, for no benefit.
For example, most vintage keyboards (mellotron, minimoog, etc.) are mono instruments, there is no stereo signal to sample. Most solo acoustic instruments (flute, violin, trumpet, etc.) are also essentially mono... additional "breadth" is from room reflections, and that's what you use reverb for (or the actual reflections in the room that your playback system is in).
