There was a discussion on keyboard forum about the organ sound on Led Zeppelin's You Shook Me that determined it was a single speed Leslie.

It wouldn't be easy and as fluid but I guess you could start with Leslie off then turn it on slow and quickly switch to fast and then back.
Thoughts or other ideas?

In "STOP Mode" you actually switch between Stop and Fast
From the NS3 manual:
To stop the rotors, press the STOP MODE button to activate the stop Mode and then the slow/ stop button (this does not deactivate the Rotary speaker - it only stops the rotors). When the slow/stop button is pressed again the rotors will accelerate to the fast speed setting. This functionality mimics the behavior of an early, one speed rotary speaker.
Then set the Horn and Rotor Acceleration to High in the Sound menu to make the switch as fast as possible.
