IIRC, Chris Wood played the organ on Empty Spaces, Steve Winwood played the RMI Piano - they certainly had this set-up when playing live.
If you feel slightly more adventurous, check out some of the mid seventies recordings from Van Der Graaf Generator - featuring a huge variety of Hammond (including bass pedals) sounds on almost every track. (The organist, Hugh Banton, was a former church organist and BBC engineer who customised his own gear, including modifying a Hammond E100 to have separate audio outs for upper and lower manual, and routing each one through different effects boards).
