I would like to ask yr help to understand in which live scenario could be helpful to use one or the other set-up.

Hi,
Good question as I was not sure to use it live, for me, it was more a studio set up, in order to get different EQ/Effects treatments on each "Slot/Instruments" (1/2 for Piano section and 3/4 for Synth section for example).
BUT:
We play "Eminence Front" by The Who and I have the sample fo the E. Piano gimmick loaded into the synth section (Sample is running all the time with the Hold function...). I need to make sure that my drummer could hear the beat and follow it. Then, the synth section is sent to another 1U rackable mixing board, different from the first one that I used for the rest of my keys. This 2nd mixer goes back to the 1rst one, which I use for monitoring and to send my mix to the front PA. This 2nd mixer sends the headphone output to the drummer headphone, then, I can adjust separately his volume into his headphone without changing the volume of my Monitor or the volume sent to the front PA.

I do the same for "Tom Cat Prowl" and "In the Air Tonight". If you have a mixer with Aux Out, Pre-fader, you could do the same with one mixing board only...You could decide to load a "Click track into your synth section and send it separately to your drummer without any interference as well...

One thing a separate out is useful for is to send the organ to a better rotary simulator

That and/or a Rhodes (which originally is mono) to an external Amp or Phaser or other gear... same with any other section/sound (e.g. process a NS Synth sound through a Moogerfooger filter, ... )

I use it with the piano. For me the piano sounds have a low level. With the separate channels I can send the piano sounds to a digital mixer and i can add compressor and reverb and adjust the volume separately. Without the amplifier or the equalizer. For Piano classic sound like Bosendorfer I like the original sound without any adjustment of the equalizer.
