i have to play janis joplin next week and i can't find exactly the hammond sound present in the last section of this video (organ solo):
Any suggestions?

Sure, I'll give try.
For most of the chords of the song up to the solo, I'd use 607804002, rotary speaker on fast.
For the solo, I'd use 627864340, rotary speaker sim on fast, Chorus/ Vib on C2, and percussion on normal volume, Slow decay, 2nd harmonic.
The left hand, lower manual comp part sounds like 006640000
