I am hoping that someone could answer a question on how to use the C2D as a midi controller as I have never used midi?
If I purchase a midi interface like the "Roland UM-ONE": http://www.sweetwater.com/store/detail/UMOneMk2/ can I just plug it into my laptop and be able to control a virtual instrument program (something with vintage piano sounds)?
If so, is it pretty easy to get things going or is there a lot involved?
Also, any recommendations on reasonably priced, but decent sounding virtual piano software?

I do not have a C2D, but yes you should be able to send MIDI via that interface to your laptop.
You could try the pianoteq demo and see if you like it before buying.
