Guys - On one on-stage rig I have three keyboards. Is there anyway I can make one sustain pedal work on all three, maybe by splitting the signal or something like that?
I'm assuming at this point that the make/model of the keyboards not the pedal is significant. Suffice to say that one standard Yamaha sustain pedal will work with any of the three on an individual basis.

Here's one idea:
MIDI Solutions MIDI Footswitch Controller with the MIDI output routed to the input of a MIDI Solutions Quadra Thru. Then each MIDI output to the instruments that you want the pedal to control.

Thanks man. I'll investigate those. I'm afraid I'm a bit dim where Midi is concerned but I'll certainly give it a look.

Unfortunately MIDI is going to be the only off-the-shelf solution.
It can't be done with a splitter cable as each instrument sends part of it's own power supply to the pedal switch, this intermingling of different power supplies could have unpredictable, and possibly damaging results.
An electronics tech could build you one using a project box, 9 volt battery, five 1/4" TR jacks and a 4PST "4 Pole Single Throw" relay.
The relay will keep the instruments' power supplies isolated.
The whole thing should cost you around $40 in parts and 30 minutes labor to assemble.
The basic concept is to wire one jack so a footswitch controls the relay coil via 9 volt battery.
The other four jacks, one each to a set of relay contacts (assuming normally open contacts )
Then it's just a matter of running a Hi-Z cable from each of "the other four jacks" to each instrument's footswitch jack.
